On Tap!
On tap today....
- A fresh batch of Fathom IPA was just tapped.
- Today's cask ale is Chocolate Porter. Mmmmm.
- Wreckoning RIS was brewed a few weeks back and is conditioning with a good portion of the batch barrel aging in 12 yr GlenBreton barrels so stay tuned for this one!

Synaptic Illusion
Just in time for the onslaught that is the Ladies Beer League (pucker up ladies, mwahaha!), Thursday @ 7:15 p.m. we have our latest release in the form of:
Synaptic Illusion - Sour Saison
Berries, fruit and spice with a little bit of funk and a whole lot of tart; a little farmhouse ale with a serious wallop of refreshing flavour and acidity.
The wort was soured with some lacto delbruckii I whipped up in the back room. Boiled the wort for 30 minutes, cooled then fermented on a 4th yr-running Saison strain originating from a culture of Wyeast 3711 French Saison - not really sure what it is now, it's morphed. Aged on oak to finish = money. Regardless, a fun beer all around!

OG - 11.4 P / 1.046
ABV - 5.0 %
IBUs ~ 7
Malts - 2-row, Light Carastan, Munich, Biscuit, Wheat, Carapils
Hops - Hallertau Hersbrucker
Hop Rate - 0.5 lbs/bbl
SRM ~ 4.7

A blend of our Jactar Stout and our up-and-coming yet-to-be-named sour ale, which is loosely based on the Kentucky Common-style and fermented on French Saison yeast.

Rookie Returns
A mini hop-bomb; our American-style Pale Mild is back on tap, now.
Based on a wee UK Pale Mild with one exception; it's pummelled with Pacific Northwest hops at IPA levels. Brewed with Columbus and Simcoe along with copious amounts of caramel, biscuit and aromatic malts. Juicy, citrusy, refreshing and very aromatic - Rookie packs a boatload of flavour.
