Thulsa Doom - DIPA
Our latest Double IPA hits the taps Wednesday, April 16th @ 4:00 PM.
The mighty Thulsa Doom spawned from the dregs of a tiny little can of Heady Topper.
The yeast strain (known simply as 'Conan') is sought after and regarded for it's intensely fruity, apricot-like ester production. We thought we'd have a time brewing up a DIPA with it, and a time we had.
Local homebrewer and Brewnoser Rob Shortt harvested yeast from a can of the deliciously hoppy brew, cultured it up to a 2 L starter and ran it across the harbour delivering it straight into my hands. I continued the mission, nurturing and feeding the beast until multiplied into a very healthy and concentrated 50 L starter for the main batch of Thulsa. Fast forward through several weeks of dry-hopping and conditioning, now we drink!

Wed. @ 4:00 PM we have a PIN of cask conditioned DIPA.
Fermented with the Conan yeast strain and dry-hopped in the cask with Simcoe.
