14 new tanks installed! We've been pretty busy over the past few weeks juggling beers around as we integrate the new tanks. I'm happy to report things are getting back to normal around this little brewery!
- Doppelganger IPA is sold out and Fathom IPA is back on tap!
- Hasukappu Weisse is running low!
- Jacktar Stout is back on tap and now available for growler fills! Now carbonated (CO2)!
- Smoked Baltic Porter is back.......
Balticus is our latest seasonal brew to hit the taps. Brewed with beechwood smoked malt to add a little twist to the otherwise classic, if not large Baltic Porter. Smokey, black and luscious just the way we like 'em!

Barrel Aged Jacktar Stout!
On tap now!
Barrel Aged Jacktar Stout
Our American-style nitro stout took on an additional 3 months maturing in a Glenora single malt barrel. Needless to say, it's taken on some dramatic flavour profile changes! Oak, whiskey, and vanilla notes dominate with ensuing layers of complexity and a velvety finish. It was well worth the wait but the time is nigh!

Malts - Pale Ale, Crystal 150, Special Aromatic, Munich, Black Patent, Carastan, Kiln Amber

This week we have a new IPA on tap. Introducing the evil twin of our delightful Fathom IPA - Doppelganger.
The recent addition of 14 new tanks to the brewery caused a slight disruption of our brewing schedule leaving us in need of some good, hoppy beer, and fast. Doppelganger is the mirror image of Fathom IPA with one significant change causing it to pull a quick left turn on your buds. Fathom undergoes a lengthy dry-hop schedule so we opted to add ALL the dry-hops to the brew-kettle at flame-out on this one! A dark and devilish thing to do but we're sure you'll get your hop-fix right here.

Beer Outages!
Ladies and Gentlemen,
We're currently in process of replacing eleven of our fermenters and serving tanks! At the same time we're adding three new vessels bringing the count to fourteen new vessels in total. Over the next three weeks we will experience beer outages but we're doing the best we can to keep beer in your glass.
Jacktar Stout is sold out, replacing it we've pulled a couple kegs of Wreckoning RIS from the archives.
Fathom IPA will be sold out this evening. We have another IPA in the works but it won't be available until Friday Oct. 26th. so an in-house hop shortage is anticipated!
Thanks for your patience as we do our best to work through this major overhaul in the brewhouse!

A local collaboration with LaHave Natural Farms and the Haskap Growers Association of Nova Scotia to create a brilliant and delicious brew comprised of Nova Scotia's new superberry - the Haskap berry. These healthy little berries along with our German-style hefeweizen come together as North America's first commercially produced Haskap berry beer.

More About The Haskap
The Haskap berry provides exceptionally high levels of antioxidants - up to three times that of a Blueberry and has vitamin C content higher than that of an orange. Read all about the nutritional value of this tasty berry here.
The Haskap, a member of the honeysuckle family, was first introduced in Canada around 1967, and is sometimes known as 'edible blue honeysuckle', 'Honeyberry', 'sweetberry' and 'haskap'. The berry is grown on the island of Hokkaido, Japan, and was named 'hasukappu' by the indigenous Ainu. Honeyberries are high in anthocyanins, vitamin C, phenolic compounds and other antioxidants. They have been used to reduce blood pressure and relieve gastrointestinal disorders, and there are reports of curative effects when used on malaria. Honeyberries also contain traces of selenium, the element said to restore youth.

What is the Haskap Berry?
The Haskap Berry is a small oval berry, often likened in shape to an elongated Blueberry about 1 inch long. The skin of a Haskap is a dark violet, but with an intense crimson flesh. It has very small, almost imperceptible seeds. The juice of the berry has a naturally high brix factor and colours almost anything it is combined with to a dark burgundy. The taste of the Haskap berry is unique and has been compared to a combination of Blueberry and Raspberry with a hint of Elderberry.

Saison Harvest Release - Saturday Sept 15th 2012
Ladies and gentlemen,
Tomorrow Saturday Sept 15th at 11:30 A.M. we have.....
Saison Harvest - a local-source wet-hop farmhouse ale.
Our Saison Harvest ale was brewed with 3 varieties of locally sourced fresh hops and supplemented with more fresh hops from QC that were hand delivered within 14 hours of harvest. The Saison yeast is one that I've pampered and kept going for 3 years now, the two previous years at the Hart and Thistle. It's exciting to watch this yeast morph and grow over time as we tailor a new Maritime-style breed of Saison. BTW, the French translation of 'Saison' is 'Season' - originating in France and Belgium, it's a true seasonal ale typically brewed with seasonal ingredients.
The beer is oh so spicy and refreshing, almost demanding you to have another. The wet-hops shine through with floral, green, vegetal and spice notes reinforcing the spicy esters created through fermentation by this very special yeast. Time to enjoy the fruits of the season! BTW, I haven't listed the IBUs since the fresh hops weren't analyzed but I'd guess it to be in the 15 - 20 range.
